I make a crust with only the graham crackers and butter, then slice a little bit of banana (sometimes a whole one) and scatter it around on the crust. Next I mix a mix 1/2 cup Splenda with 8 oz. Philadelphia Cream cheese that has been softened at room temperature. Then I mix 16 oz. of Cool Whip with the Splenda/cheese mixture and put it on top of the bananas. I then add a can of Cherry Pie Mix with NO SUGAR ADDED. This will make 3 small cheesecakes or 1 large one. I always make this for big family " get-togethers " . Even the non-diabetics love it. I've checked my BG's on numerous occasions after eating a piece of it and it doesn't make them go up. I normally cut a small pie into 8 pieces. Yesterday I really " pigged out " and ate 2 pieces (which was 1/4 of a pie) and it didn't go up more than 10 points. Ummmm Ummmm Good! Love ya all!
