Why do we need THICKENERS??

I was intrigued by the mention of thickeners (see below). Why would we need

them?? What normally thickens foods that diabetics cannot tolerate well??

My guess is for thickening gravy and sauces. Most people use flour

or cornstarch. Roxanne in WA

Starch (corn starch, flour, tapioca) = carbs. Not good for the low carbers,

like bread, potatoes and rice.
