From: community recipe swap: Main Meals Zucchini Meatloaf Muffins From the kitchen of ANGELICA_MINGS servings | 6 estimated POINTS per serving | 4 course | Main Meals Ingredients 16 oz lean ground beef1/2 c & 1 Tbl dried fine bread crumbs1/4 c finely chopped onion3/4 c shredded unpeeled zucchini2 tsp italian seasoning (seperated)8oz can tomato sauce (seperated)2 tsp Splenda1/2 c & 1 Tbl RF mozarella cheese shredded Instructions Preheat oven to 375. Spray 6 regular size muffin pan with cooking spray. In a large bowl combine meat, bread crumbs, onion, and zucchini, 1 tsp Italian seasoning, and 1/2 of the tomatato sauce. Mix well. Evenly divide meat mixture between muffin cups and make an identation in the center of each.In a small bowl combine the remaining tomato sauce, splenda, and 1 tsp Italian seasoning. Stir in mozzarella cheese. Evenly spoon about 1 Tbl of sauce mixture into the indentaion of each muffin.Bake 35 minutes. Place muffin pan on a wire rack and let set for 5 minutes.
