Unfortunately I am assuming that your body doesn't know the difference between palm sugar and sucrose! Does anyone know if it really has a lower glycemic index than sucrose? Each company will provide a GI value but I've not seen evidence from any third-party researchers to really say that it's any different from sucrose. Taste-wise, I don't really detect much difference.
