OK, Ida. Have you gone around the bend? Pineapple??? Although, now that I

look at it, this looks just odd enough to be good! I bet the pineapple makes

you think there is meat in this! I think I will try it this weekend and report

back on Monday. Thanks for a new recipe!

Subject: Chili Recipe (unique ingredient)

This recipe came from the WW Boards with RAVE reviews. I have not tried it,

however, it looks yummy.

1 large onion, diced

1 green pepper, diced

1-1/2 cups (about 5oz) matchstick carrots

1 pkg. (8oz) sliced mushrooms

1 can crushed tomatoes (Italian w/herbs is good)

2 cans (15.5 oz) kidney beans, undrained

2 Tbsp. chili powder

AND

1 can crushed pineapple, drained

Throw all the ingredients in a crock pot; stir

Cook on high for 4 hours.

couple of notes:

I didn't drain the pineapple. As a matter of fact, I never saw that word

until right now when I was pasting it into this message! oops! So, obviously

it's ok with the pineapple juice.

Also, instead of 2 tbsp. of chili powder, I threw in one package of chili

seasoning.

I also threw in a half a jar of salsa that I had left over in my fridge,

just to get rid of it. I like things spicy, so it worked for me. If you

don't like it spicy, cut back on the chili seasoning and don't throw in a

half jar of hot salsa!

It probably doesn't matter if you don't have a crock pot -- I'm sure it will

work just fine on top of the stove.

I took one for lunch today, and froze four containers with two cups in each.

Five lunches or single dinners, for a really low cost.
