Guest guest Posted August 19, 2001 Report Share Posted August 19, 2001 Baked Barley with Red Onions and Celeryserves 6 to 8 4 tablespoons oil or butter1 large red onion, diced3 stalks celery, diced2 cups pearl barley1/2 teaspoon dried oregano3 1/2 cups veggie stock1/2 cup white winesalt and pepper1/2 cup chopped chives Preheat the oven to 350Æ’F.In a flameproof oven casserole, heat the oil. Cook the onion and celery until soft, about 6 minutes. Stir in the barley and cook about 3 minutes. Add the oregano, stock, and wine and bring to a boil. Cover the casserole and place in the oven.
