From the AccuWeather Low-Fat Cookbook Veggie Burgers 1 small zucchini, grated1 medium uncooked potato, peeled and grated1 medium carrot, grated1/4 cup grated onion3/4 cup egg substitutepepper to taste12 slices whole wheat bread, toastedsliced red onion and lettuce leaves, optional In a bowl, combine the first six ingredients; mix well. Pour about 1/2 cup batter onto a hot griddle lightly coated with nonstick cooking spray. Fry for 2-3 minutes on each side or until golden brown. Serve on toasted bread with onion and lettuce if desired. Makes 6 burgers. Nutrition Facts per burger (without bread): 57 calories, 63 mg sodium, trace mg cholesterol, 8 g carbohydrate, 5 g protein, 1 g fat, 1 g fiber. Exchanges: 1 vegetable, 1/2 lean meat. Weight Watchers Points: 1 pt per burger (without bread)
