Zucchini Meat loaf Italiano

(from Dana Carpender's Lowcarbezine)

2 medium zucchinis, chopped

1 medium onion, chopped (All told, you should have about 2 cups of

chopped veggies)

2-3 cloves garlic, crushed

2 tablespoons snipped fresh parsley (Optional, but good!)

olive oil

1 1/2 lbs. ground beef

1 egg

3/4 cup grated parmesan cheese

1 teaspoon salt

1/2 teaspoon pepper

Sauté the zucchini, onion, and garlic in a few tablespoons olive

oil for about 7-8 minutes. Let it cool a bit, then put it in a big

bowl with the rest of the ingredients. Using clean hands, mix

thoroughly.

This will make a rather soft mixture -- you can put it in a big loaf

pan if you like, or form it on a broiler rack. I formed it on a

broiler rack because I like the grease to drip off, but keep in mind

if you do it this way that you won't get it to stand very high --

mine was about 2 " thick. Bake at 350 for 75-90 minutes.

There's about 17 grams of usable carb in the whole darned loaf.
