Guest guest Posted December 31, 2000 Report Share Posted December 31, 2000 in my low carb cook book she says to eat potato skins also for a snack if you are craving potatoes.. the fran mccullough cook book I would think once you are off induction you could occasionally have a treat. here is her recipe. she says leave as little white as possible.. use a large flat potato such as an Idaho.. scrub the potatoes and prick the skins.bake until they are tender and skins are crispy.. cut them in half length wise.. scoop out the flesh put the shells on a cookie sheet with a rim paint them generously with melted butter.. and seasonings.. add cheese or grated parmesan.. (optional)bake ten to fifteen minutes.. serve with sour cream and chives.. fat 17 gr carb 10 gr per one large potato..so one half skin would be about 5 carbs..
