cheesecake crust

got this off the lc recipe site, I might play with it a a bit to include the

nuts not sure yet but that would really bump up the carb count .. maybe I

won't .. just go this route.

Cheesecake Crust - from el

1 cup almond flour

1.25 sticks of butter

1 egg

1/4 cup of Splenda

1/4 teaspoon almond extract

1/4 teaspoon vanilla extract

1/4 teaspoon cinnamon

Mix together and spread on bottom of cheesecake pan.

Notes:

Try adding a teaspoon of xantham gum, guar gum, notSugar, or notStarch. You

might need to sprinkle a couple teaspoons of water over the mixture to

activate the gums.

You can also try adding an egg yolk to bind things together. Using the

whole egg, or just the egg white, tends to produce something closer to

concrete than shortbread, in my experience!
