Of course not many people have AC up here so I have fans in every room. Last night I kept windows open and fans going to cool the house down but it was still hot this morning. Oh well!! I have the freezer stocked with Otter Pops (1pt a piece) so we are ready :-) I made Crockpot Cantonese Chicken for dinner last night. I liked the taste but didn't care for the color. It's basically a sweet-n-sour chicken and I like my sauce red for that. Here's the recipe... Crockpot Cantonese Sweet-n-Sour Chicken 6 servings 5 points per serving 2 pounds boneless skinless chicken breast, cut into strips 1 each green bell pepper, cut into strips 1 each red bell pepper, cut into strips 1/2 each medium onion, thinly sliced 1/4 cup brown sugar 2 tablespoons cornstarch 2 cups pineapple chunks in juice, reserve juice 1/4 cup cider vinegar 1/4 cup water 1 tablespoon soy sauce 1/2 teaspoon salt 1. Place chicken, pepper strips and onion in the crockpot. 2. In a bowl, mix the brown sugar and cornstarch. Add 1 cup of the reserved pineapple juice, vinegar, water, soy sauce, and salt; blend until smooth. Pour over chicken and veggies. 3. Cover and cook on low for 7 to 9 hours. 4. One hour before serving, add the pineapple chunks. Mix well. 5. Serve over Chow Mein Noodles or Rice. I served it over rice for an extra 3 points.
