Been lurking around for a couple of days and finally decided to make my presence known! I'm a 38 year old working mother of 1 from the mountains of North Carolina and have been going to WW since March. I have lost 17.5 lb. and would like to lose about 65 more. The weight is coming off slowly, but I'm learning some excellent habits in the meantime. My hubby is extremely supportive which is quite helpful but sometimes you need someone who has " been there, done that " for that little extra push to make it to goal. Anyway, I saw the recipe for the fudge cookies and thought I'd share a recipe I tried over the weekend.... 1.5 POINT BROWNIES 1 box reduced-fat chocolate cake mix 1 15-oz can pumpkin (plain pumpkin, not the pie filling) 1/2 c water Mix all ingredients together. Pour into a 9 x 13 pan and bake at 350 for 25-30 minutes. Cut into 24 pieces and enjoy! *Bonus: Counts towards a serving of vegetables!! **You may also sprinkle the top with 1/4 cup chopped nuts before baking. Then they become 2 point brownies. My whole family loved these! If you want a special treat, serve on a pretty plate with a dollop of FF Cool Whip and a drizzle of Hershey's Lite Syrup. Still only 1.5 points! Just mix one box of Spice cake mix and I can of packed pumpkin (only saw one size at the store) together, that's all, no water, etc. It will be thick. Put in muffin tins sprayed with Pam. I made 12 and they are 3 pts each according to recipe I saw on an earlier post. I use mini muffin trays and usually get about 6 dozen, so I figure I can have a few at a time. One of my residents at work gives me a Butterfinger candy bar every night when I give her her medicine! It is so tempting to take it back to the office and eat it, but instead I have been just putting into my bag (out of sight, out of mind). Now I'll have something I can eat to replace it.
