Trim the stems of the mushrooms off about 1/4 inch from base. Cut away some

of the dark gills if desired (they can get muddy when cooked). Cut mushrooms

into thick slices. Place mushroom slices on a square of heavy-duty aluminum

foil. Pick herb leaves off the stems, then roughly tear them into large

pieces (small leaves like thyme can be left whole). Place the herbs on top

of the mushrooms. Pour oil over them, then squeeze the lemon over. Fold foil

up around them and crimp tightly. Place in 400-degree oven about 15 to 20

minutes, or place foil packet on a hot grill for 10 to 15 minutes. Serve hot

as a side dish.

Makes 2 to 4 servings.

I made this the other night to go with roast beef and it was a

delightful side dish instead of potatoes. Just one more alternative. To cut

down lemon carbs I used one small wedge and then added lemon pepper.
