A light-as-air sponge cake layer topped with fresh seasonal fruit, an especially pretty idea for a summer party dessert. An old favorite from the Argo Cornstarch box. 2 eggs 1/3 cup sugar (I used 1/4 c sugar but can substitute fructose--I used Splenda and it didn't turn out very well) 1/4 teas salt 1/3 cup sifted flour 1/3 cup corn starch 2 cups assorted fresh fruit (mandarin oranges, sliced strawberries, peaches, apricot halves, grapes, etc. Glaze (recipe below) Whipped cream Grease 9 x 1 1/2 inch round layer pan. Line with waxed paper and grease again. (I used Pam and parchment paper.) In small bowl with mixer at high speed beat eggs until fluffy. Gradually add sugar and salt; beat until mixture is doubled in bulk and mounds slightly when dropped from a spoon (about 5 minutes). Sift flour and corn starch over egg mixture; thoroughly fold in. Pour into prepared pan and bake in 350 oven 25 minutes or until cake springs back when lightly touched. Cool 10 minutes. Remove from pan and cool completely on wire rack. Place on serving plate and arrange fruit as desired on top of layer. Spoon glaze evenly over fruit and let set 30 minutes. Garnish with whipped cream. makes 8 servings. Glaze: In small saucepan mix together 1 TBS corn starch, 1 cup apple juice, and 1 TBS lemon juice. Stirring constantly, bring to boil over medium heat and boil 1 minutes. Cool. Makes 1 cup. But I like plain vanila cauliflower (I like most other veggies plain also) and find it exceedingly irritating when dietitians and the like attempt to make things palatable or justify healthy eating by tryying to foist off on us what, to me, is a falsehood, that is, that the substitutes taste just as good as the originals. But I like plain vanila cauliflower (I like most other veggies plain also) and find it exceedingly irritating when dietitians and the like attempt to make things palatable or justify healthy eating by tryying to foist off on us what, to me, is a falsehood, that is, that the substitutes taste just as good as the originals. I don't mind not eating certain foods. But don't shine me into the bargain! (grin) P.S.: The individual who invented the gardenburger ought to be hung, drawn and quartered! My system is a bit different (got the idea from a magazine). I have a few 1" binders, each for a theme like breakfast, light meals, meats & BBQ, desserts & baking, etc. Then I put in dividers for subcategories in each binder. If I like a recipe, I printed from online, I just hole-punch it and file it. If it's a magazine recipe, I just cut it out and glue it on a white piece of paper. My recipes have a lot of notes on them, too, to remind me what adjustments I made and how everybody liked the dish. Oh, I still have my mastercook software floating around on my computer.
