I've heard really mixed reviews. Fauxtatoes is the term generally used for a recipe made from cauliflower (or daikon radish or turnip or some other lower carb veggie substitute). The traditional fauxtato recipe is basically mashed cauliflower mixed with butter and cream, often topped with cheese and baked. Ugh.. maybe if I am REALLY craving potatoes..AND if I get a fry daddy or something.. oil splattered EVERYWHERE..they stuck to the bottom of my (stainless steel) pan... too much work for 1 serving (3.5 carbs, 170 calories, and this kinda crispy thing)...well, I probably got half a serving out of the whole thing... again if I was having a major french fry/potato chip craving which pork rinds wouldn't fix..I might use them for this purpose again.. this weekend I'm going to try making them as mashed potatoes (a more involved process, but I figure I'll make a lot and I can take some for lunches next week in gladware)...I'll let you know how they turned out. I will say one thing..YES they taste just like potatoes...well, kinda like those potato flake things...I am not a huge potato freak...my carbo addiction tends to sugar more than starch...if you are into potatoes and don't mind frying and such, I would highly recommend this product. My husband is a big potato eater and I give him a piece and he loved it..he was the one who suggested getting a fry daddy (I said we would if he went low-carbing *hehe*...he said he'd think about it).
