Ka,

I bake mine at 300 degrees. What temperature are you baking yours? And I

bake them for 30 to 40 minutes. I store them covered in the refrigerator,

and even if the exterior is crumbly when it comes out of the oven, they

soften after a few hours of being covered and refrigerated. In fact, they

tend to become " sticky " and stick to your fingers, the plate, whatever.

Atkins Rolls are made with eggs and cottage cheese or cream cheese and get

their height by having to beat the egg whites until they are stiff. They

are very low carb and can be used as a wrapper for sandwiches or burgers

quite nicely.
