I have done a re-write of my " Gluten Free for a Healthy Life " book, which will now be " Tell Me What to Eat if I Have Celiac Disease " . In the OLD book, which was written in 2003, I had a chart entitled, " Gluten Free Substitutions " (from the Manual of Clinical Dietetics 6e) that I had gotten permission to use from ADA. The Chart was all about flour substitutions to use on a GF diet. I want to include the chart again but was told that obviously that manual is no longer being used and they are not allowing reprints from it. Does anyone know if this chart is in the new ADA Nutrition Care Manual? Or anywhere else that would allow permission to use it? Thank you!
