See, I am still not gone. Here is my contribution to the recipe file. I

hope no one has sent this one in yet. If you like it, tell me at

abcpben@...

Here goes...

total of 12 carbs for the whole eight servings...so don't eat it all at

once, or do...

Chocolate Mousse

1 envelope unflavored gelatin

1/4 cup cold water

1/3 cup boiling water

24 packets of Splenda or one cup of the pourable stuff (according to the

splenda phone lady)

2/3 cup dutch processed cocoa ( I don't know what the carb count is for any

other cocoa, but you can figure that one out)

2 cups (1 pint) of whipping cream

2 tsp. vanilla extract (I didn't know if extract had carbs, so there are

none included in that 12 carb count/8 servings)

Sprinkle gelatin over cold water in small bowl. Let stand 2 minutes. Add

boiling water. Stir until gelatin is completely dissolved. Cool slightly.

Mix splenda and cocoa in large bowl. Add whipping cream and vanilla. Beat

on medium speed until mixture is stiff. Scrape bowl occasionally. Pour in

gelatin mixture. Beat until well blended. Spoon into eight dessert dishes.

Refrigerate for thirty minutes. Enjoy.

  • 3 weeks later...

here's a yummy recipe that's good if you have to finger foods to any holiday parties.....my non-LCing family devoured them!

SAUSAGE BALLS

Ground beef 1 lb. approx.

Sausage 1 lb. approx.

Shredded cheddar (a few handfuls)

Water (a few tablespoons)

Cayenne pepper  (several dashes)

Squished together into 1" balls, onto cookie sheet in 350 degree oven for 20 min. I removed them from the sheet as soon as they were done.

Donna, I'm sorry it took a while to get back to you, my typing hand really hurt yesterday so I took some pain meds and fell asleep!! The bread I made was lemonade bread. I like to make it in the summer to snack on. Small loaf(1 pound) 11/2 teaspoons active dry yeast 11/4 cups bread flour 1 cup whole wheat flour 3/4 teaspoons salt 1 tablespoon sugar 1 tablespoon vegatable oil 1/4 cup frozen lemonade concentrate thawed 1/2 cup plus 2 tablespoons water

add all ingredients in the order suggested by your bread machine manual and process on the basic bread cycle according to the manufacturers directions.

I hope you like it. Another of my favoites is Hawiian bread, but that i buy a mix. Do you have any favorite recipies? Have a good evening,
