I'm going to do a cooking lesson on nutritious/healthful tailgating for the

Wounded Warriors here at Fort Riley.  I've been going through my 6887 emails

looking for vitamin D recs for my pg co-worker and came across this one.... 

Jackie, do you have a recipe for the baked poppers and moose nachos.... maybe

using something other than moose since they're in short supply down here in

Kansas. :)   Anyone have other ideas for me to pass on the my Soldiers?  Many

have tbi's, ptsd and other assorted healing injuries.  Many are far from home

and live in the brand new WTB (warrior transition battalion) barracks, but they

have fairly complete kitchens unlike the regular barracks.

Jump up and down at every play.  Air squats and jumping can help burn off some

of those extra calories (and decrease blood clots from sitting too long).

Challenge your friends to pushup or situp competitions during commercials.

 

Use individual serving bowls & plates instead of putting out the bag or a big

bowl (cuts down on mindless eating).

 

Lots of fizzy water inbetween the sodas/beers.

The poppers recipe comes from the Cabot Cheese web sight. Basically fresh

jalopenas cut in half filled with a mixture of cream cheese and cheddar cheese

dipped in beaten egg then in bread or cracker crumbs baked at 350 " till brown.

Moose nachos can be made with chile grind beef, just a coarse ground hamburger,

then cook with taco seasoning. I microwave velveeta cheese and canned milk till

smooth for the sauce. Put a bunch of corn chips on a platter add the meat,

chopped onion , slice jalopenas, chopped tomatoes, then pour the cheese sauce on

top then top with salsa of choice. It works best with really lean meat and you

need to use velveeta or a processed cheese food just like it for a smooth sauce.
