Stir it up before you put it into the fridge. That peanut oil is good for you. Carol S I did but this PB but without salt and to be honest I miss the flavor of the reduced fat. Can't remember where I got it but it's Canadian I think. BTW - for those of you living in SW Ontario, just north of the town of Simcoe there's a big peanut farm and they'll grind freshly roasted peanuts for you as you watch. Unbelievably good PB!!!! Spicy Peanut Pasta INGREDIENTS 8 ounces pasta shells 1 large carrot, thinly sliced 2 cups broccoli florets (about 1 pound with stems) 2 green onions, sliced 1 medium green bell pepper, sliced 1/2 cup Creamy Peanut Sauce (recipe follows) 2 tablespoons chopped peanuts PROCEDURE In a medium saucepan cook pasta according to package directions. Meanwhile, place carrots, broccoli and green onions in a skillet with a little water. Cover and steam until tender, about 3 minutes. Add green pepper and Creamy Peanut Sauce, mix together and keep on low heat. When pasta is cooked al dente, drain and add to vegetable mixture. Mix thoroughly and serve, garnishing with chopped peanuts. Makes 4 servings. Nutrition information per serving: 349 cal., 13 g total fat, 0 chol., 153 mg sodium, 5 g fiber. Creamy Peanut Sauce INGREDIENTS 1 cup peanut butter, at room temperature 1 cup plain nonfat yogurt 1 garlic clove, minced 1 teaspoon sugar 1 teaspoon sodium-reduced soy sauce 1 teaspoon dark sesame oil 1/2 teaspoon ground ginger 1/8 teaspoon crushed red pepper flakes, or to taste 1 tablespoon hot water PROCEDURE In a mixing bowl, combine all ingredients and mix well with a wire whisk.
