Guest guest Posted July 17, 2004 Report Share Posted July 17, 2004 Crustless Mexican Quiche 4 each eggs -- lightly beaten 4 ounces canned chili peppers 2/3 pound chorizo 1 1/3 cups milk 1/3 cup monterey jack cheese -- grated 1/3 cup colby cheese -- grated 1/4 teaspoon salt dash pepper Spray non-stick vegetable oil spray on glass pie pan. Crumble and saute the chorizo sausage until well browned. Drain off excess fat, using colander. Line pie pan with chilis and sausage. Combine eggs, milk, cheese, and seasonings; pour over sausage mixture. Bake at 350F for 25 to 30 minutes, until golden brown or until a knife inserted halfway between the center and edge of the quiche comes out clean. Let stand 5 minutes to finish cooking before serving. Per Serving (excluding unknown items): 269 Calories; 21g Fat (71.0% calories from fat); 16g Protein; 4g Carbohydrate; trace Dietary Fiber; 141mg Cholesterol; 802mg Sodium.
