If your ldl cholesterol is in range, it is perfectly fine to eat many of the above meats. hang in there... However, you will quickly find out that to maintain a good a1c like that, you more than likely can not eat more than 20 to 30 grams of carbs per meal. I eat 90 grams total a day, 30 breakfast, 30 lunch, 30 dinner,and run an a1c of 5.3 consistently. That is, if I am good boy and eat only 30 at each meal *grin*. Do it 90% of the time and you'll live a long and productive life. BTW yes, if you are wanting to lose weight, cut your carbs back to 45 a day. If you are already a diabetic, try limiting them to 30 per meal, or less, and see how well your sugars run. I wonder if he had someone read him the label on the corn beef to learn how many carbs are in it; he might have needed more than the 4 units he took. Re: What can I eat? actually pat, talking to diabetics, if you can keep your a1c between 5.0 to 5.5 eat as many carbs as you want. However, you will quickly find out that to maintain a good a1c like that, you more than likely can not eat more than 20 to 30 grams of carbs per meal. I eat 90 grams total a day, 30 breakfast, 30 lunch, 30 dinner,and run an a1c of 5.3 consistently. That is, if I am good boy and eat only 30 at each meal *grin*. Do it 90% of the time and you'll live a long and productive life. BTW yes, if you are wanting to lose weight, cut your carbs back to 45 a day. If you are already a diabetic, try limiting them to 30 per meal, or less, and see how well your sugars run.
