With my 8 week weight management class I do cooking demos – smoothie for

breakfast, wrap for lunch, chicken burritos for dinner. I also do grocery store

tour and send participants on scavenger hunts – each team brings in a healthy

snack the following week. In the nutrition online class for our community

college, we get them to watch either Food, Inc or Supersize Me on hulu.com and

write a paper on it. You can bring in someone from a local organic/free range

coop to talk about growing and slaughtering practices or someone from a

greenhouse to talk about growing herbs in the backyard and then combine it with

a cooking demo on using herbs. The cooking demos are labor intensive but if you

get the class to be involved, it’s a lot more fun! You could bring a chef in

to do the cooking too – we have very few good chefs in this small Southern

town but maybe you’re in a bigger area.

I collected food labels from packages used in my house or from friends. During

the first class we reviewed label reading, first with a single serving product.

Then we looked at packaging that had multiple servings. Throughout the course

we would go back to these packages to look at the macronutrients and

micronutrients (as we were talking about each chapter). A comparison of food

labels was included on the final exam.

I am teaching a 16 week basic nutrition course for the general public at our

community college this fall and I am looking for any fun resources, teaching

aides from NASCO, handouts, etc. It has been some time since I have taught a

class.
