I use her gluten free blend (6 parts white rice flour, a 1 part tapioca flour and 2 parts potato starch) in just about everything that would require flour. Xanthum gum is also called for in lots of baked recipes but you might need to pick that up at a health food store. Ours is refrigerated. Did you consider having an order shipped from Ener-G? You can check their website to see if it would reach there when you want it to. Since the company is on the west coast, you may still have time. Have a great time, Any advice on what other food I should pack, because I don't feel confident with just showing up with bread and pasta but I also don't want to overpack. Help!!!!
