How did you make that spinach casserole? It sounds really good!

Tonight I made spinach casserole with ricotta, a litttle feta. onions, 2 eggs, a little garlic and she ate hers all up plus she asked got seconds!

I got it from another low carb list I'm on--so I can't take credit for inventing it! LOL But it's good!

1 large bag of chopped frozen spinach, thawed and squeezed dry

5 eggs, mixed up and beaten a bit

4 oz. reduced fat feta cheese, crumbled

1/4 cup Romano cheese, grated (or you could use parmesan)

dash of garlic/onion powder

dash of nutmeg

Mix all ingredients together and put into a baking dish that was sprayed with olive oil Pam (or canola oil spray) and bake at 350 degrees for about 30 minutes (or until lightly browned).

It's even good cold!! :)
