But, there are gluten free soy sauces, if just applied as you eat the sushi, would also make it safe. Many Tamari (I think a lot tastier than soy sauce) are wheat free. I don't know if any soy sauce is generally included IN the prep of the sushi or not. . . Again, talk to the people prepping the sushi. It would be VERY easy to keep gluten free with a bit of education.
