Guest guest Posted July 5, 2003 Report Share Posted July 5, 2003 Sure!! How about Spiced Pig's Feet? Deviled Chicken Wings? Jambalaya L'Acadien? Georgia Apple Betty? Fried Pies? Pandowdy? Ambrosia? Sweet Potato Pancakes? Willette's Yam Casserole is one I use for every holiday! Willettes Yam Casserole: 6 to 8 medium yams or sweet taters 1/2 cup Butter Flavor Crisco 1/2 cup sugar 2 eggs 1 can (12 oz.) frozen orange juice concentrate thawed or fresh OJ 1 tsp cinnamon 1/2 tsp nutmeg 1/2 cup raisins 1/2 cup mini marshmallows 1. Heat oven to 350 Grease 2 quart casserole or baking dish with butter crisco 2. Boil yams in skins until tender, peel,mash (or my idea: use canned!) 3.Combine yams, Butter flavored crisco, sugar and eggs in a large bowl. Beat to blend adding as much orange juice as needed for a good consistencey. Stir in Cinnamon and nutmeg. Beat 2 minutes. Stir in raisins. Transfer to casserole dish. Sprinkle marshmallows on top 4. Bake at 350 for about 30 minutes Can be covered or uncovered. If uncovered, a light crust will form. Ham Hocks and Red Bean is a favorite of mine too! 1 pound dried red beans 2 quarts water 1 pound ham hocks 1 onion, minced 1 red pepper pod 1 clove garlic, minced salt and pepper 1. Soak beans 2 or 3 hours or overnight. Drain. 2. Place bean in large saucepan. Cover with water. Bring to a boil. Add hocks, onion, red pepper, garlic, salt and pepper to season. Reduce heat and simmer 2 hours or until tender.
