By all means subdivide if you don't plan on freezing some of it or feeding a crowd. I invented this for a different diet, but it suits South Beach just as well. My basic idea was to have a good serving of vegetables for each serving of protein. It also helps keep the meatloaf moist. Feel free to fiddle with the amounts and kinds of vegetables, though this is a tried and true recipe that has been enjoyed as is by many of my friends (and their non dieting husbands!) 3 pounds ground turkey 4 eggs, beaten 1 green pepper, finely chopped 3 plum tomatoes, finely chopped 1 1/2 cups green onions, finely chopped 3 1/2 cups zucchini, finely chopped 1 t. dry mustard 1 t. chili powder 1 t. thyme 2 t. garlic powder (or to taste) salt and freshly ground pepper to taste Chop veggies in food processor or by hand. Mix all ingredients in a big bowl, shape into 2 loaves, place on a baking sheet with a lip or in loaf pans. Bake at 350 degress until done.
