I always assumed the this course was pretty " basic " and not much more than we'd have needed to learn to become RDs in the first place. Didn't you all have to take extensive food service sanitation to graduate? Please correct me if I'm wrong. Or is this why ADA doesn't allow for CPE? I can't believe that it would be different if done online now. Also one can submit activities for PDP credit even if they have not received prior approval. One needs to keep the same documentation as if they were prior approved. When I teach a class it is a 8 hour course followed by a two hour limit test. Just remember while you can take the course on line the test needs to be protored in person by a ServSafe proctor. Guest guest Posted January 14, 2010 Report Share Posted January 14, 2010 I work both Food Service and Clinical and Alaska requires that there be a ServSafe trained manager on sight or within fifty miles due to widely spread out school systems. ServSafe is a Nationally Recognized Program and fulfills learning code 8040 - Food safety, HACCP, and sanitation. While ServSafe may seem very basic as noted by Digna most RDs do not have even basic knowledge that ServSafe teaches. I remember back in the dark ages while in training that the RD who ran the kitchen was not considered a " real " dietitian. Incase anyone wants to know they still had A & B vegetables in the diabetic diet, Ensure was God's gift to dietitians, and TPN was only done in four hospitals in the USA. Most dietitians today do not know their way around a hospital kitchen and unless they train for it never will need to. ServSafe is a listed on the CDR web sight as being offered in various sights around the country. So put it down on on your PDP Plan 8040 level 2. If you live in a large metropolitan area there is always a class going on Mac's does them all the time, who is to know and it is the knowledge base that is important. But I did not say that.
