I think you need more vegetables. You are supposed to have a

minimum of 4 ½ cups of veggies a day. He suggests ½ cup at breakfast, 2 cups at

lunch and 2 at dinner though of course you can sort it out different if you

like. I tend not to eat many at breakfast, but then I snack on veggies all day.

Instead of a single cucumber (or in addition to) could you have a big salad for

lunch? My dh has approx. 4 cups of romaine with

sprouts, mushrooms, onions and sometimes bell pepper, topped with a sliced chicken

breast. I don’t have such huge salads myself, but just pick at veggies

throughout the day. The beans are great in the chili (good carbs

and fiber!) but a salad or raw veggies on the side would be good too :D

Sorry, I’m obsessed with veggies, lol!

I take very seriously that this is NOT a low carb

diet, but a low glycemic index diet and I am

determined that my dh and I get plenty of healthy carbs

on a daily basis :D

Thanks for the input! I am already at work... but, will plan for more veggies

tomorrow, especially during lunch. I will add a salad on the side tonight, for

sure. I am already so ready for FRUIT! :)
