Simple week one meal plan ..plez

Can anyone give me a " simple " week one meal plan...It has to be

easy ..I'm a single mommy and I babysit out of my home...I am way

busy and find that I grab what easy and not whats good for me...

I think the trick is to make what's good for you easy!

I'm not much on planning, but here is my approach: You can pre-grill

seasoned chicken breasts, roast some pork or beef, hard boil some eggs,

make a batch of brown rice or barley, have lots of fresh veggies

washed, cut up and ready to go, make batches of things like tuna salad

and hummus, buy lean ham, low fat cottage cheese (maybe in those little

packages) and string cheese sticks, salad greens and dressings, whole

grain bread, that kind of thing. Then you can throw together a

sandwich or chef salad or even assemble a good meal with little time or

thought involved.

Also batch cooking can be a life saver. Cook once, eat several times

always makes sense. I sometimes make a big meat loaf with lots of

minced veggies in it, so a slice is practically a meal in itself phase

1 or add a good starch for phase 2.
