GFCF Birthday cake

If you can get to nutrition smart in pembroke pines, they sell the

kinnikinnick chocolate cake mix that comes out pretty good. Sorry

cannot remember if it is soy free too, quite certain it is nut

free. Re: eggs you could always use the powdered eggs for the

recipe. For the frosting I used the buttercream recipe from special

diets for special kids. Here goes:

1/2 cup CF Margarine (Fleischman's unsalted parve margarine)

1/2 cup white shortening (Palm shortening)

1 lb confectioner's sugar

1 tsp vanilla

2 TBL milk substitute

the frosting comes out great with the chocolate kinnikinnick cake

mix. Everyone at my son's birthday party ate it, yes even those not

on the GFCF diet including adults. Good luck. Beth

Dear GF Community,

There is a true bakery in Philly called Mr Ritts on Passyunk Ave. Everything

is GF. They actually have all kinds of GF samples on the counter just like a

regular Old Fashioned Bakery does. They will not ship cream cakes, but they

do ship many different sturdy cakes, and possibly GF sheet cakes that you

can frost yourself! Not cheap but professional!

If all else fails, I love Pamelas Brownie Mix, baked up and frosted! Simple!

Not beautiful, But it works everytime! Good Luck!
