Guest guest Posted May 24, 2001 Report Share Posted May 24, 2001 Sue, Don't want to sound negative, but if she hates the cream, I have my doubts on the coconut milk, plus it isn't as dense in fat, therefore you have to add some oils to compensate. We find it at Food Lion in the evaporated milk section. I've seen it in the mexican section (or ethnic section). BTW, be careful, some coconut milks have sugars. We use " A Taste of Thai " which is in a gold and green can. Guest guest Posted May 24, 2001 Report Share Posted May 24, 2001 Also, I've just found, after desparately trying to find alternatives to cream when refused it while she was sick -- that I could re-do several of her meal plans without any cream at all. For example, for breakfast, she typcially has eggs, butter, fruit and cream diluted with water as " milk. " I was able to just use the egg, butter and fruit and still get the ratio perfect and use up all grams of protein, fat and carb. I'm slowly reintroducing cream. . .but geese, it's 110 degrees here already. .. .who the heck wants heavy cream when it's so darned hot! Also, you may have already tried this, but for dinner, I whip cream and add Bickford flavorings and then freeze it as " ice cream. " She loves it and thinks it's fun to guess what flavor she'll have next! I add Katera's oils and a teensy speck of stevia ..........she LOVES it. It can be partially frozen in this state, too and then stirred and is a yummy dessert. Patti Coconut milk Since everyone is discussing coconut milk, it reminds me that I meant to ask a question a while ago. Has anyone found inconsistencies in the Thai brand coconut milk? I no longer use it, or any other brand for now, because it seemed like each can varied a great deal as far as how much fat was floating on the top. Marissa's ketones are weird anyway, so I can't blame anything on the milk, but it made me nervous. If the data on the label is the same, then the contents should be the same, as long as it's thoroughly shaken. To help combat that, I shake it to death before opening (but sometimes it is still lumpy). For us, it hasn't made any difference in 's ketones or seizures, so I stick with this brand. I haven't found a brand as dense in fat as the Thai.
