It's funny though, not five minutes before I was looking through an old Joy of Cooking, hoping for some sort of new idea. LOL Well, as I flipped pages to the index, something caught my eye. Pigtails. Hmmm, could this be a cute name for a twisted bread, or filled goodie? Knowing Joy of Cooking, it wouldn't be. LOL And it wasn't. My favorite part is this: Wash and blanch, about 3 to 5 minutes, Pigtails. Skim the scum off and simmer... Skim the scum off'n your pigtail juice. MmmM! Boy howdy! ROFL Golly if'n my mouth just aint a'watrin now. I won't be trying this, sadly, but will wait for the rave reviews from anyone else who does. LOL BTW, you'll want to season your stock the same way you would for the Jellied Pigs' Feet. Let me know if you'd like either of those recipes typed out from the book? Only they cook the pigtails in with sauerkraut. He LOVES pickled pigs feet. Also he loves pork hocks. I have had those baked on top of sauerkraut and they aren't bad. One time he talked me into buying pig ears and snouts, NEVER again!! YUCK!!!! I am Irish so I was raised with corned beef and cabbage. Have you ever tried ox tails? Now that sounds really gross probably but they make the best soup. VERY rich. One time we were by his parents and his Mom asked if anyone wanted a sandwich. We said ok. Never thinking to ask what the meat of the day would be!!! She said you get the bread, condiments etc and I will take care of the meat. I said fine. Well when I turned around here was this "thing" on the cutting board. It looked like a huge tongue but I thought no, can't be. I said uh, what is that????? She said tongue. I said NO THANKS!!!! Everyone enjoyed their sandwich but I wouldn't touch it with a ten foot poll. Well hope everyone got a chuckle out of this. This is what makes the world go round. Most of the stores want close to or over $3 a pound. We can't afford that. We used to manage a video store and there was a butcher shop next door. Chuck asked there one time and she said sure, but you have to get on the list! That reminds me, we need to call her and order some. It will be soup time pretty soon with fall not far away. Hopefully they are still reasonable over there :-) If you try them and like them I have a recipe called Oxtails Lousianne. Haven't made that in ages. My son might like it. he’s the proverbial Mikey kid………lol…..”I know, lets give it to Mikey, he’ll eat it”! [sub for Mikey] lol… I use to use ham hocks with my beans, but they were so fatty and salty, Now I use ½ of a ham shank. The butcher will cut one in half to fit your crock-pot. Then I put it in the pot with small northern white beans covered with water, seasoned with garlic and a couple bay leaves. YUMMY!! J………A side of corn bread, and you are good to go! OR……..I get some nice fresh green beans and use those instead of the white ones, without any seasoning but the ham, and cook on low all day in my crock-pot. We have friends who have given us a freezer full of meat several times when they've butchered cows and goats. We were given a tongue once. I did make it and everyone tried it. It's the rule, ya know. Not a big hit, except with Jenna. She was 4 I think. She loved it and each morning until it was gone, she'd wake up and ask for tongue for breakfast. She'd usually just have it cold, cut into small pieces. Jenna also loves rabbit. This! is the dish she asks for as a birthday meal. LOL Now, my Mother has had a few meats I've not tried. What's that show that makes people eat gross stuff, to try and win money? I don't care how many millions of $ I could win, I'd never do it. LOL. I once ate dinner at a friend's house when I was 16, and we had "stew". I LOVED the meat. I kept giving compliments to the mother and finally asked my friend what it was. Then she starts making beating heart noises. Beef heart. I gulped down my last bite, and almost choked on it. I've never eaten it again. But, I do like chicken hearts. Can't stand gizzard or liver, but my mom loves them both. My grandma loved pigs feet and frog legs. Ham hocks and beans are very common here. I tried rabbit once. My aunt traded it to us for a roast. I cut it up, coated and fried it. I didn't know how to cook it then, and I still don't. I hated it. It had a strange flavor, and I just couldn't handle it. I think I fed it all to our german shepherd. I hate sauerkraut with a passion. My aunt forced me to eat it with hot dogs when I was 9 or 10, and to this day, I gag if I even smell it. I am curious to try turtle, and calamari. We are taking a romantic weekend Sept. 8th-10th to the coast. We used to catch young tuna on our boat and we'd pickle them, awesome!! I even ate bull from the bullfight once, when I was on Hospital on a Sunday...the strangest thing I think was when we got a half lamb's head, roasted...the cheek was awesome but I had to pass on most of the rest. I ate wild boar once, awesome as well, with some sort of chestnut sauce...unforgettable. I used to have fun taking Americans out to eat the calamari romana (fried squid), I would not tell them what it was until they were totally engrossed with it, then I'd fess up and they would go EEWW YUKK and I would say "Well that wasn't your reaction until you knew...enjoy it and open up to new culinary delights! We have friends who have given us a freezer full of meat several times when they've butchered cows and goats. We were given a tongue once. I did make it and everyone tried it. It's the rule, ya know. Not a big hit, except with Jenna. She was 4 I think. She loved it and each morning until it was gone, she'd wake up and ask for tongue for breakfast. She'd usually just have it cold, cut into small pieces. Jenna also loves rabbit. This is the dish she asks for as a birthday meal. LOL Now, my Mother has had a few meats I've not tried. In fact I have a can of smoked baby octopus in the pantry right now. It seems like I've eaten eel. My father was a food adventurer and from the time I was a baby he shared all sorts of odd foods with me. He and I were eatin' buddies because no one else is the family would partake. Probably the most exotic is the french fried grasshoppers and woolly worms and chocolate covered ants. We used to eat steak and kidney pie (I wasn't as crazy about that but it was okay). Dad loved really stinky, very aged cheese on fancy crackers. I love fine aged Stilton cheese but I'm not crazy about the Limburger. Whew! Does that stuff stink! I love smoked clams, oysters, etc. And I love anchovies on my pizza and in my salads. I love tripe. I make great menudo but no one in my family appreciates the tripe like I do. lol I love the taste and the texture of tender tripe in the menudo. I put fresh pigs feet in the menudo along with beef and pork. And of course the tripe. I like calamari. I think lots of people don't realize it's squid. They love it as Calamari but don't like squid, if you ask them. lol I think I'll pass on the roasted lambs head though. Now, myself, I have never tried it but everytime we go in a mexican restaurant around here he'll ask for it and they'll say"Oh no Menudo" and he'll always say how can you be a MExican restaurant without Menudo. He speaks spanish because his grandfather always hired migrant workers to help at harvest and he just picked up the language. His brother is married to a Mexican citizen and they live in tijuana and he drives everyday into San Diego to work and will drive back to Mexico at night.
