I use it exclusively at home, and when I make my mother's sweet potatoe casserole for Christmas, I'll use Splenda in that, too. We only have the sweet potatoes once a year, so I don't worry too much about that. The baked cheesecakes have about 10 grams total carbs to a serving (I think). Splenda does not do everything - for example, we tried using egg white, Splenda & cinnamon to whip up a topping and it would not stand stiff even after 90 minutes of machine whipping. For specific limitations, consult the Splenda 800 number or do their web page, think it is www.splenda.com. So, yes, if you're using much Splenda you could get a rise. According to Bernstein, Equal and Splenda are about 95% sugar in the form of dextrin or maltodextrin.
