Guest guest Posted November 23, 2001 Report Share Posted November 23, 2001 Since someone has asked offline about the vegan recipes I mentioned in my post yesterday, I thought maybe there would be others with an interest in vegetarian or vegan recipes as well. It does represent an extremely healthy diet, afterall. Even as a lacto-ovo-vegetarian myself, creating completely vegan meals for my daughter over the last few years has been a challenge to me! But, thanks to the Internet and a few great websites, this task has proven much easier over time. At any rate... The pumpkin pie and roast recipes came from the PETA website. but, there are many great recipes on other vegetarian websites too. http://www.peta-online.org/liv/r/pumpkinpie.html the only complaint my daughter and I have about this recipe is the nutmeg. it's too much and quite spicy as a result -- but tones down nicely when served with vegan whipped cream or non-dairy ice cream (made from rice milk). we've made this pie several times and keep forgetting to halve the nutmeg to see if it would make the recipe better! oh, and silken tofu has a much creamier/smoother texture to it than cream and eggs do in a traditional pumpkin pie. I couldn't find the roast w/stuffing recipe online anymore, but this one is very close to it -- only without stuffing: http://www.peta-online.org/liv/r/cashewandchestnut.html more websites with even more recipes: http://www.vegetarianrecipe.com/default.asp http://www.vrg.org/ http://www.vegetariantimes.com/magazine/nov01/recipes.asp http://www.ivu.org/ http://www.vegweb.com/ most of the recipes I've tried have been actually quite good -- as long as I stick to the precise recipe and don't attempt to deviate too much. also, at holiday meals I tend to make big portions of items like baked sweet potatoes w/green apples, brown sugar & walnuts and set aside a dish separately for her without any butter in it and then freeze leftovers of everything vegan into dinner trays for her. including mash potatoes and other veggies served. and, I've discovered there is 1 version of instant brown gravy that contains no animal fat in it: Lawry's Brown Gravy. It does have a trace quantity of milk protein so it isn't vegan but is lacto-vegetarian. my daughter lets this item " slip " by as inconsequential but is about where she draws the line on the consumption of animal products. healthy eating to all of us...
