If your blood sugar is staying at about 150, your first concern is to get it down nearer to 100 before worrying about what carby foods you can handle. Shiela, why don't you post what you've been eating for a few days... perhaps there are some other suggestions that we could make about what you are eating to get your bs down some more. Then when its about 100 - 120 most of the time, you could try to test for some of the other foods you want to see how they do. When you are running high, its not a good time to feed any carbs into the system. Are you under stress, or have any type of infection? That is as long as I watch the other carb intake at the same meal. 1/3 of a cup isn't hardly worth bothering with as far as I'm concerned. Sandi muffins. I only made that one mistake and boy did it show. I want to test rice and pasta and see how it makes my blood sugar rise, but now I'm a little afraid to experiment. And next time, try JUST ONE type of carby food in a balanced meal. For example, I can handle up to a full cup of brown basmati and wild rice, if it is part of a meal including several pieces of chicken and a big serving of spinach or green beans. White rice I can only handle half a cup in the same meal. And I can't handle either without the protein (a snack of leftover brown/wild rice with butter caused a short but high spike in my BG). Similarly with pasta. Don't do the " experiment " with a full plate of spagetti ;@) Do something like beef stroganoff with a measured 1/2 c or 1 c of egg noodles. Or do a saute of shrimp and lots of zucchini and mushrooms (garlic, butter, pesto sauce, etc.) and add in a measured amount of cooked whole wheat shells or elbow macaroni. Another approach is to join one of the low carb recipe exchanges, and learn how to make low carb muffins. I haven't seen a low carb cornbread (that may be impossible), but I do know that Eden Soy brand Black Soy Beans (canned) are the lowest carb bean around, and can be successfully used in all sorts of bean recipes - chili, baked beans (using artificial sweetener), bean and vegie soup, etc. So you might be able to recreate the menu in a more manageable sense by making your own LC muffins and bean dish, and having a VERY small piece of cornbread along with. -- el (andrea@..., andrea_frankel@...) LOL There were some posts about this brand not long ago on one of these lists, and everyone spoke very well of them. When my DW and I were shopping yesterday, I noticed them, so we grabbed them. They really *are* as simple as can be -- mix the box contents with some water, dump the result in a muffin pan, bake for a few minutes and Voila!! Magic!!
