I love to hear about Peggy having coffee on the porch and watching the birds and other creatures. Who was it who wrote about the treefrogs climbing up her window the other morning post rain? That was awesome. Was it ? We finally moved into our new bedroom this weekend (construction is still ongoing, but anyway). Our new bedroom has a huge window overlooking the backyard and yesterday morning the kids climbed in bed w/ me and we just watched the birds, squirrels and bunnies in the yard and then I opened one of the windows and we just listened to the birds. What a great way to start a morning. If after that I could pop on over to Peggy's for coffee, maybe even check out some tree frogs. Joyce D. makes a heck of a coffee cake, I'll stop and grab her before we come over. Joyce, I'm finally harvesting some veggies from my garden and one of my girlfriends says she has more zucchini and yellow squash than she can handle. Maybe we (the kids and I) can come visit soon (for real, not like this imaginary visit to Peggy's). Let me know how you're feeling and what your schedule looks like in the next week and a half. I'll have Apria to just bring a tanker truck and sit it in the yard.. I love putting together a BIG group in my head. I used to have 30 to 40 for Thanksgiving. All by myself..LOVED it. Guest guest Posted July 3, 2007 Report Share Posted July 3, 2007 ZUCCHINI MUFFINS Â 2 eggs 3/4 c. milk 2/3 c. veg. oil 2 c. flour 1/4 c. sugar 1 tbsp. baking powder 1 tsp. salt 2 c. shredded zucchini 4 tbsp. dried basil 6 tbsp. grated Parmesan cheese (1 tsp. per muffin) Beat eggs in bowl; stir in milk and oil. Combine flour, sugar, baking powder and salt. Mix dry ingredients into egg mixture, just until moistened. Batter should not be completely smooth. Gently mix in zucchini and basil. Fill greased muffin cups about 3/4 full. Sprinkle each with cheese. Bake at 400 degrees for 18 to 20 minutes or until done. Remove from pan. This reciept is fresh off the web. Sounds right. Grease bottoms only of 2 loaf pans. Mix zucchini, sugar, oil (or applesauce), vanilla and eggs in large bowl. Stir in remaining ingredients. Pour into pans. Bake 50 to 60 minutes or until toothpick inserted comes out clean. Cool 10 minutes. Loosen sides; remove from pans. Cool completely on wire rack before slicing.
