I just typed this up today and debating posting it.

TURKEY MEATLOAF

1 ½ lb ground turkey

¾ cup bread crumbs

2 tsp. basil

½ tsp pepper

½ cup chopped onion

1/3 cup homemade ketchup

1 beaten egg

* Optional add-in for flavor or variety – see below

Preheat oven to 350. Toast SCD bread slices (about 3) and put in

food processor with the basil and pepper to make crumbs. Mix all

ingredients together. Spoon into loaf pan or shape like a loaf in

the middle of an ungreased baking diet. Bake for 50 – 60 minutes.

If desired, spread ketchup on top for the last 10-15 minutes.

Leftovers can be frozen as individual slices and warmed up in the

microwave for a quick meal. I usually mix up 2 batches of meatloaf

at a time so I have extra for later.

*Whenever I bake chicken I reserve the liquid left over in the

fridge. After it has solidified, I scrap off the fat from the top

and what is left is like gelatin. I melt about ¼ cup of this and add

to the meatloaf for a wonderful flavor. If you want to add veggies,

throw a carrot, celery etc in a blender until it is liquid. Add

about ¼ cup to the meatloaf.

This recipe seems delicious.

How did you make the SCD legal bread crumbs? Did you make it from

almond bread?

Yes. I save the ends of each loaf of bread I make in the freezer

until I make meatloaf. If I need more, I cut off from the loaf we

are using. The ends are drier and make the best crumbs. I make

bread from the recipe in Elaine's book but substitute a mix of pecan,

walnut & hazelnut flours for 1/2 cup. This makes the bread moister

and gives it more of the look of wheat bread.
