If zuccini is similar to eggplant (I'm not sure!) you could try salting

it a bit and letting it dry on paper towels. This will pull out some

of the water in them and flavor them at the same time. It might help.

I know when I cook eggplant that it really soaks up the oil too. I

haven't cooked it that often (we don't like it very much) so I've never

salted it.

I'm going to try these this week too. Sam could use something other

than bananas. He won't eat cooked carrots or pear sauce......sigh.

Please tell me again how you made the zucchini fries to start with.

Did you deep fry them, pan fry them, bake them?

Trying to figure out how they got so much oil in them to start with.

I went by the recipe on pecanbread site. says to cut them, dip in oil, then bake

at 425. Didn't work that well for me.I turned my oven down and that was a little

better but they tended to burn and weren't very crunchy and this makes the

difference in her little world.Didn't try pan fry, I did deep fry, that wasn't

getting it either.
