This will pull out some of the water in them and flavor them at the same time. It might help. I know when I cook eggplant that it really soaks up the oil too. I haven't cooked it that often (we don't like it very much) so I've never salted it. I'm going to try these this week too. Sam could use something other than bananas. Didn't work that well for me.I turned my oven down and that was a little better but they tended to burn and weren't very crunchy and this makes the difference in her little world.Didn't try pan fry, I did deep fry, that wasn't getting it either.
