PB frosting

Has anybody ever made the peanut butter frosting with coconut oil

instead of butter? I'm making the pb cake for my 2-yr-old's

birthday and don't want to do dairy yet.

I made just a small amount for a couple of cookies for Adam to

decorate at school at Christmastime. I didn't care for it, but he

liked it oK. I always use the pb frosting on teh pb cake. (1 cup

of each, I think, whipped together). Also the marshmallow-y honey

frosting in BTVC would probably be good too.

Gia,

Yes, I have made the frosting using coconut oil.

Just make sure you only use about 3/4 of the called-for amount.

Coconut oil is " wetter " than butter and your frosting will be too wet

if you use the full amount.

I took it to another child's birthday party and all of the kids who

tried the cake really liked it and wanted more.

I baked it in a two piece non-stick angel food cake pan. It worked

out great because there is no center section. So, it cooked evenly.
