Baked squash chips are a big hit!!!

I tried baking squash chips since my son reacted badly to the fried ones. I

sent them to school with lunch. Not only did he love them and worked for them

all day but the teachers tasted them and loved them too. Now everyone is making

squash chips!! I am sooo excited that my son is eating them. we're up to 3

veggies!!!

I just made my first batch of squash chips, too. My son loves them

so much that I can use them as a reward. It's really the first

thing I have made on this diet that I really like. My only problem

is that it takes so long to bake them.

I have been lining them up in a single layer on a cookie sheet. Is

it necessary to do it that way, or is there an easier way?

I'd love to know if this would work for carrots? I hate that Luke can't have

squash. ONE DAY!! He misses chips, I've found no substitute he'll accept that

is low in the salicylates that affect him so badly (squash being a big one).

We've tried a couple different methods of making " carrot chips " or " carrot

curls " and they have not been a hit.

I bake them on a cookie sheet with a little bit of oil and salt and bake at

about 350. watch closely - they burn easily.When I am all done I put them in a

very low oven for an hour to crisp up. It is time consuming but for my cutie,

I do it!! I am going to try carrot chips next.

I use butternut squash. get one with a long neck. The round part has the

seeds and can't be used. peel with carrot peeler. then I put it through my food

processor with the slicer disc and it makes thin slices like potato chips. put

on cookie sheet with a little oil and salt and bake at about 350. If they need

to be crisper when you are all done put them in a very low oven for about an

hour to crisp.

Hi ,

WHat kind of squash do you use? At what temp do you bake them?

Would you mind walking me through your recipe step by step. I'm

extremely challenged in the culinary department! But I would love to

get more veggies in my daughter.
