I think that the illegal Chevre is probably that soft yummy little log - a type

of cheese (eg Gouda or Colby), rather than a trade name (eg Cracker Barrel or

Applegate Farms).

Honestly I am not quite sure that it is ok, as it is made by La

Chevre, and when I searched under the ABC list of what is allowed, it

says that La Chevre is not allowed. I am quite confused.

But anyways, I saw some at the local Shop Rite in New York.

Any further knowledge would be very helpful.

I wish I knew how to make this type of cheese, I would do it myself!

Thanks,

I think the cheese you bought is okay. I think what Teri was saying is that

there is a type of cheese called chevre that is illegal but that it sounds

like you bought a legal cheese by a company called Le Chevre. Does this make

sense or I am the one that's totally confused?

Cheese has to be aged atleast 30 days. ( It used to be 60 but the time was

recently revised by Elaine after doing additional research). Enjoy!

Yes, that's what I meant; you said it more clearly, . I think 's

probably okay with that cheese, too, especially if introduced slowly away from

other new stuff and watching for any sensitivity.
