Hi !

Here it is:

Cashew butter muffins

1 cup cashew butter

1 banana

2 eggs

1 tsp baking soda

1/2 tsp vinegar

In a food processor:

Mix cashew butter and banana together until completely blended.

Add eggs and blend completely.

Add baking soda and blend completely.

Add vinegar and blend completely.

(Use cupcake liners to prevent sticking to pan.)

Makes 12 muffins.

Bake at 400 for 10 minutes.

Penny,

I had two jars of cashew butter in my cabinet and one open one in my

refrigerator that were not getting eaten. That's why I made it with

cashew butter.

I don't currently have any almond butter, but I don't see why it would

make a difference.

I am going to try it with peanut butter too.

Let me know how it turns out with almond butter.

Jody, I made the muffins yesterday as it was a snow day and we baked. They were

yummy! They reminded me of the banana pancakes because we always use cashew

butter for them. Thanks for the recipe it was delicious!

You're welcome.

I am always glad to hear that other people like my " experiments " .

I have a batch of them in my oven.

I am going to try them with peanut butter (as soon as I get some).

I am also going to experiment with making them without eggs.

But that won't be for a day or two unless my husband can find some

really ripe bananas at the store today.
