Here it is: Cashew butter muffins 1 cup cashew butter 1 banana 2 eggs 1 tsp baking soda 1/2 tsp vinegar In a food processor: Mix cashew butter and banana together until completely blended. Add eggs and blend completely. Add baking soda and blend completely. Add vinegar and blend completely. (Use cupcake liners to prevent sticking to pan.) Makes 12 muffins. That's why I made it with cashew butter. I don't currently have any almond butter, but I don't see why it would make a difference. I am going to try it with peanut butter too. I am going to try them with peanut butter (as soon as I get some). I am also going to experiment with making them without eggs.
