Fluffy muffins that look like real muffins (or cupcakes if you frosted them). Cashew Butter Muffins by Jody 1 cup cashew butter 1 banana 2 eggs 1 tsp baking soda 1/2 tsp apple cider vinegar Blend cashew butter and banana in food processor until complete blended. Add eggs and blend again. Add 1 tsp baking soda, blend again. Add 1/2 tsp vinegar, blend again. Divide batter into 12 cupcake paper lined muffin tins. Bake at 400 for 10 minutes. I will add the recipe and the pictures to Pecanbread.com soon. These muffins even had little air pockets in them like regular ones. Light and fluffy, not at all heavy. Very tasty. (Please remember I am a super picky eater and don't really care for things made of of nuts. So, it takes a lot to impress me...LOL. I make lots of things that I never eat one bite of that my kids will eat with no problem. But I actually would eat one of these on purpose.)
