I also make them in an angelfood pan (that has two sections for easy removal). Using it avoids the gooey center problem quite nicely. Three eggs seem to help and I can't recall the reason now, but it was logical and I've made it that way. Jody, you're right, a bigger pan helps, as does more time. Gotta watch and wait. Touch it in the center. It's done when it's no longer " jiggly " . And Jody's idea of the angel food cake pan is a stroke of genius. I use an 8x8 Pyrex dish with 3 eggs and it is truly amazing. I also lightly butter the pan, and then smooth parchment into the pan, then pop the batter atop that. You get baking parchment at most grocery stores. Guest guest Posted January 21, 2004 Report Share Posted January 21, 2004 Also cover the top with foil, cut a large X in the middle and fold back the foil to leave about 2 " rim of foil around the edge of the pan. This lets the middle cook more while protecting the edge from cooking too fast.
