Also allow them to drain on paper towel. Try puting them back in a hot oven

after draining.

I always use butternut squash but maybe there are different varieties. The

last one I used just turned to mush and I tried to make the fries by cooking

them in oil, cooking them on a stone at 425 and cooking them as suggested

earlier at 350 after microwaving them for 5 minutes. Mush every time. I used

another butternut squash this afternoon (I don't give up easily) and I used the

microwave 5 minutes and then cook in a 350 oven method and they came out nice

and

crispy. The squash that worked was much firmer and more difficult to cut and

lighter in color than the one that turned to mush every time.

Hi Jody,

I have made the squash fries both ways. With the skins on and off. So, it

is really just a matter of tolerance (tolerating the skins) and preference.
