I tried this once and the sauce turned brown and nasty after cooking all day

- I think tomato sauce is fragile and can break down, but it may have been

something I did incorrectly...

I'm sure it is. Long slow simmering would make excellent sauce or ketchup

just simmer for about an hour at medium heat, but yes, it is

necessary to occasionally stir.
