I cooked the clementines in water and kept adding water. Cool and then peel.

Then I grounded up the inside and then put in a strainer. Threw away the

juice. They make the best muffins. I love them!

Clementine Orange Muffins - Question

I found this recipe on Pecanbread for Clementine Orange Muffins, and

it looks delicious!

Does anybody know if the clementines should be peeled after they are

cooked, or should I grind up the peel with the insides?

CLEMENTINE ORANGE MUFFINS

5-6 Clementines (approx 1 lb)

6 eggs

1 c. honey (can use less - 1/2-2/3 c.)

2 tsp. vanilla

2 tsp baking soda

5 c. almond flour

1. Place clementines in a saucepan and cover them with water (no,

don't peel them). Bring to a boil. Boil for 2 hours, adding water as

necessary. (Yes, I said 2 hours... it makes your house smell like

Christmas!)

2. Drain the clementines and let them cool.

3. Remove the hard brown stem piece if present. Slice each

clementine in half and remove any seeds.

4. Toss the clementines into a food processor or chop them up by

hand.

5. Pour the chopped clementines into a strainer and sent them aside

to drain a little.

6. In the meantime, put everything except the almond flour in the

mixer and mix it up (those without mixers shouldn't have any trouble

doing this by hand).

7. Add in the somewhat drained chopped clementines and mix those in.

8. Add in the almond flour.

9. Fill muffin cups and bake at 300 degress convection for 25

minutes, or 325 degrees conventional oven for 30 minutes.

I would be inclined to discard the peel. Bitter oil and pesticide residue

are found in citrus peel.

Grind up the whole orange, peel and all. The peel will be really

soft after the cooking.

First pick off the little " stem " if there is one, and also cut in

half, and feel for seeds (there may be none, or may be a few,

usually less than 6).

I am the one who posted the recipe, although I did not invent it.

We have made them, peel and all, several times.

I thought fruit was to be peeled.

Ooops, I never thought about that!

The recipe was posted a long time ago, originally on the LI list,

and then someone posted it over the old, old ElainesChildren. I had

had it in my files for a long time, and decided to make it at

Christmastime.

Adam did OK on them, even though he is really in stage 2 type foods.

But you are right, maybe these really should be reserved for after

you have added unpeeled fruits.
